HAPPY DIWALI TO YOU.
I made all these vegetarian dishes at work today to celebrate the festival of light. Right now I can hear fireworks outside my window and am slightly gutted I am not with my family.
Here is what's on display starting from the top of the page...
▶ Sweet potato with phanch phoran
▶ Masala wedges
- Par boil potatoes and then tip in a roasting dish with vegetable oil, 1 tsp turmeric, 1 tsp chili powder, salt, 1 garlic clove and 1 tsp garam masala. Bake for half an hour until golden and crispy.
▶ Curried chick peas
▶ Saag (curried spinach)
- Fry half an onion with 1 crushed garlic clove - empty a 450g bag of fresh spinach and watch it reduce. Keep on a low heat and add 1 tsp chilli powder, 1 tsp garam masala, 1 tsp turmeric, salt and fresh ginger and a bit of lime juice. This could end up tasting like wet spinach so keep on checking on it and flavour as you go.
▶ Tomato, onion and fine bean coconut curry.
- Quite random this recipe but it tasted amazing, that's always the way don't you think?
Fry half an onion in vegetable oil with 1 crushed garlic clove - wait for onions to brown. Cut vine tomatoes in half and place down in the frying pan. Add a handful of fine beans and half a can of coconut milk. The next step is to add 1 tsp chili powder, 1 tsp ground coriander, 1 tsp ground cumin and 1 tsp turmeric.
All these dishes took me an hour and half in total, and this was when I was also watching a toddler and three boys were running around the kitchen.
Shattered. But will still bake! After all at Diwali you have to exchange sweets.
