Here is a delicious and quirky sandwich idea that welcomed me back home to London.
I fancied some bacon, but after the banana and prune combination it was time to try something different.
Try this:
Cooked beetroot
Feta cheese
Rocket leaves
Fried unsmoked bacon
Strangely I didn't reach out for the ketchup, because the beetroot and bacon hit the spot.
The beetroot and feta partnered fantastically, and I recently read that Hugh Fearnley- Whittingstall makes a mean beetroot and feta soup!
