Tomato, Basil and Cucumber Soup

So you have tomato and cucumber in cold salads and Gazpacho, but try it hot.

5 large tomatoes
200ml passata
3 sundried tomatoes
150ml water
Quarter of large cucumber diced
3 basil leaves
1 tsp turmeric
Small clove of garlic
Pack of Wright’s ciabatta bread mix

Make – your ciabatta dough and leave to prove for 40 minutes
Mini blender – cucumber, basil, sundried tomatoes and garlic
Fry – tomatoes and turmeric for a few minutes.
Heat – medium pot, fry cucumber paste and add tomatoes.
Pour – water and passata
Leave – on a low heat

This album brings back the memories of the walk to school

Use hand blender – combine soup so it turns a healthy red.
Bake - your bread
Serve – in a bowl or big mug
