The Beets in the Cake




Beetlejuice [Soundtrack] By Various Artists


Watching this tonight with one of these cupcakes for pudding...maybe 2!

Recipe for 18 cupcakes


Ingredients:
150g butter
100g caster sugar
100g cocoa powder
225g self raising flour
2 tsp baking powder
175g cooked beetroot (I used 2 balls from a packet)
DO NOT USE PICKLED BEETROOT
Zest of half a lemon
3 large eggs


Ingredients for filling:
Double cream
Preferred jam, I used my MacBlack Raspberry which is still going strong.

Method:


Preheat oven 180°c

: Put everything in a cake mixer, oh the joy of not using a hand held whisk!


If no cake mixer is around:


Blend beetroot 
Whisk butter and sugar, add the eggs and fold in everything else.

< Bake for 25 minutes until they look like mini muffins 



; Leave to cool

: Whisk cream until stiff and get creative.
Use a small sharp knife and cut top of cake off, spoon in cream and jam, put the lid back on.


Next Time:
I will use different jams or fill with orange buttercream.
Or use the top of cakes to create mini whoopie pies.

Great to bake for big parties and if they don't all go, put them in the fridge where they should be fine for 3 days.
