125g caster sugar
150g soft Anchor butter
50g dessicated coconut
150g self raising flour
2 tsp baking powder
4 medium eggs
1tsp strawberry essence
Half tsp almond essence
Ingredients for Buttercream:
250g soft butter
400g icing sugar
Small drop of strawberry essence
Tiny drop of red food colouring gel
Method:
Preheat oven 180°c

: I have my own Kenwood old school cake mixer, so just put all the above in and let it do all the work.
< Bake for 20 minutes and then leave to cool completely
: Whisk all ingredients for buttercream, if more gel needed add little at a time.
