Yellow Risotto

I chose this soundtrack again, because I think it has an amazing track listing and I didn't want leave the risotto to skip any tracks!


Recipe for 4

Ingredients:
Arborio risotto rice 300g
2 pints of chicken stock
5 basil leaves
3 cloves
half tsp cumin seeds
20g frozen peas
1 yellow courgette, chopped in small chunks
chorizo sausage cut in thick slices
Maldon salt flakes
black pepper
1 garlic clove crushed and finely chopped
1 tbsp chilli oil
100g Davidstow low fat cheddar cheese grated

No parmesan but cheddar, I feel like I am disgracing the Italian original recipe, but you got to trust me, cheddar works too.

Method

: Heat chilli oil in large non stick frying pan

+ garlic, cumin seeds, cloves
Fry until it smells fragrant

+ risotto rice, and 3 basil leaves
 Stir until all the rice is lightly covered in oil

: Add the stock in small batches, covering the rice, not drowning it. Keep on topping up every time the rice soaks up the stock. Pick out the basil leaves before they look like spinach.

: You can add the peas and courgette to the pan when you have half the stock remaining. 

: When the rice has been cooking for 20 minutes and your arms are getting tired, taste to check if rice is done.

Stir in the chorizo, cheese and season.

< Once it's done, leave off the heat with a lid on for 5 minutes



9 When serving, pick the cloves out with a teaspoon if you can see them, or just give your guest a warning!

Garnish with basil leaves

Next time
I wouldn't change a thing, this was amazing. The cheddar added a lovely consistency to the rice, the chorizo always a winner and the yellow courgette did well.
