80's Cake



Made for a special lady who is turning 80 this Saturday.

Two sponges sandwiched with black cherry jam, covered in marzipan and royal icing.
Top sponge:
Plain sponge with almond essence and a touch of pink food colouring. Just so she gets a surprise when it is cut!  Nice to see some colour instead of the standard yellow sponge.

Second sponge:
Plain sponge with vanilla essence and lemon curd.

 
I kept the decoration really simple because her grandchildren wanted to add things on top. 

I'm sure it will go down well.

Before I bought this CD, I used to listen to my brothers old audio cassettes.
For those who do remember the cassette days, how weird is it thinking back to pressing down the play and record button to record a song from the radio, timing was essential!

So an 80's cake made to a 90's soundtrack, slightly random but worked well, and will taste amazing.
