Christmas Cake PT2

After the first cake catastrophe, I wanted a playlist that was going to relax and keep me happy, so I was ready to get this cake just right.


Christmas cakes do not look attractive, that is why they are kept in storage once made then covered in icing closer to Christmas! 


You need a few hours in the day to make this cake, ideal maybe on a day off.



▶ Serves 8 adults

Ingredients:


1 tsp = 5ml
1 tbsp = 15ml

1kg mixed dried fruit (35.3 oz)
100g chopped dried apricots (approx 4.5oz)
250g unsalted butter softened (approx 8 oz)
250g brown soft sugar (approx 7.5 0z)
1 tsp lemon extract
1 tsp cinnamon
1 tsp nutmeg
100g chopped hazelnuts (approx 6.5 oz)
200g plain flour (approx 7.05 oz)
2 tbsp black treacle (that is why cake looks so dark)
4 medium eggs
Brandy or orange juice to feed cake after

Method:

Preheat oven 180°c

: Butter and line a 18cm cake tin, leave some baking paper above the tin.
: Beat the butter, sugar, extract and powders.
: Add the eggs.
: Fold in the treacle, flour, nuts and all the dried fruits

The mixture should look like melted milk chocolate and very lumpy.

: Pour in the tin

: Bake for 2 hours at 120°c

< Test with a knife and when it's done leave it on a cooling rack to rest.

: Prick holes with a few cocktail sticks and pour 100ml alcohol or orange juice.

: Keep in a tight cake tin, and feed it alcohol or juice every fortnight until the 22nd December.

: That's when I will cover the cake in marzipan and icing.
