Tuesday's Indian Roast


Roast chicken on a Tuesday?

'Original Pirate Material' By The Streets

No bizarre dish name after an album today, it just so happened that I put the radio on and The Streets were on so played them in the background!



▶ This small whole chicken serves 4


What you need:


I LOVE Tuesday attitude


Ingredients:


Whole chicken (1.45Kg)


Blend of: 3 garlic cloves, 2cm chunk of ginger and 3 small green chilli's.


2 tbsp vegetable oil


1 tsp turmeric


1 tsp garam masala


1 tsp chilli powder


Fresh coriander 50g


2 large green chilli's


The last three powders are used a lot in my Indian recipes, to be honest they are the only ones that I know work very well together.


Method:


Preheat oven 220°c


Line roasting tray with foil and place chicken in the middle.


Stuff the cavity of the chicken with roughly chopped coriander and the two large green chilli's.


Put the blend and powders in a jug, whisk and add the oil.


Prick the chicken all over so the spices and oil can get in.


Pour the contents of the jug over the chicken and rub in spices with your hands.


< Cook for an hour, baste the chicken half way through cooking. 


In the picture it looks like there is a lot of oil, this was from the juice and of course the marinade. Do not be put off! the chicken needs time to rest then you can serve it on a plate, and the oil should not be a problem.

Next Time:


Will add parboiled potatoes in the tray and parsnips. Or make a selection of mini curries to pick at.


Serve with naan bread, paprika spiced sweet potato wedges and mango chutney.


Great to use in sandwiches for work, in salads, or stir through creamy pasta.


My housemate Jon saw this and said "Wow, Mita you going to eat ALL of that tonight?"


Me "No way, this chicken will last me all week!"
